🥦 Organic Vegan Veggie Pad Thai Salad w/ Almond Butter Sauce 🥦🥢

 

We just dropped another new YouTube video!!! It’s our organic vegan pad Thai salad. This dish is the bomb! Loaded with veggies and pad Thai rice noodles, and as always, gluten free. Instead of using soy tofu, we used a chickpea tofu that we discovered at Wholefoods. It's by Franklin Farms, and we were very excited to give it a try as a replacement to soy tofu (since we don’t use soy in our dishes). If you enjoy soy tofu then by all means, you do you! No worries from our end, just sharing this new find. The sauce is made with almond butter and the dish is veggie loaded. It’s become a staple in our house over the last couple of months, and we know that you will just love this beyond delicious version of pad Thai as a salad. It just feels lighter as a meal, and the raw veggie count in the salad is so satisfying, as well as filling. Sometimes we add broccoli and peas to it, and sometimes we don’t.
